Today is World Vegetarian Day, which celebrates the following philosophy: “To promote the joy, compassion and life-enhancing possibilities of vegetarianism.” I get to highlight my wonderful partner, Zach, who has been vegetarian his entire life. His mom was also vegetarian for multiple years, and has been vegan for over 15 years. Through knowing Zach, I have grown in my knowledge and skills of cooking vegetarian food. A large misconception of the vegetarian diet is either that it’s all leafy greens or that it’s all carbs and cheese. Vegetarian food is vast with beautiful colors, incredible flavors and large nutritional value. Another misconception people have about eating vegetarian is that you do not eat any protein ever. There are a variety of high protein foods in the vegetarian diet. Some examples being nuts, beans, tofu and edamame. Tonight, we got to celebrate World Vegetarian Day with one of our favorite home cooked meals, Pad Thai! We make it with a spicy peanut sauce, sautéed vegetables, crispy tofu and perfectly chewy rice noodles. We also top our Pad Thai with lots of chopped green onions, cilantro and peanuts. This meal is satiating, nutritious and absolutely delicious. If you’ve never made Pad Thai at home, this is your sign to do so. If you did not get to celebrate World Vegetarian Day with eating a delicious vegetarian meal, I recommend you find a new vegetarian recipe and give it a try!
