White People Enchiladas!

Inspired by the timeless classic, ‘White People Taco Night’ by the comedy band, Lewberger, I wanted to share one of my favorite family recipes, which I am lovingly naming ‘White People Enchiladas’. The ingredient that makes this truly a ‘White Person’ recipe is the use of canned Cream Soup in the filling. Is it authentic? No. Is it delicious? I think so! I have made these for multiple people and get raving reviews, so you’ll have to make them yourself and let me know your thoughts. You can make these with Chicken and use Cream of Chicken Soup, but I made the dish vegetarian tonight by substituting Chicken with Black Beans and Cream of Chicken Soup with Cream of Onion Soup. The preparation is still the same by sautéing diced onions and bell pepper in a pan. Then, you add garlic, spices and your protein into the pan until properly incorporated. Add the filling from the pan into the creamy mixture of Cream Soup and Sour Cream. I actually substituted Sour Cream with Plain Greek Yogurt to up the protein in the dish. Scoop the mixture into tortillas, roll, and place in a 9×13 pan. Add some of the saved cream mixture on top of the tortillas and sprinkle with cheese, which should always be measured with your heart. Bake in the oven at 400° for 20 minutes and what comes out is a cozy, rich, scrumptious weeknight meal to enjoy. I also made Cilantro Lime Rice and Guacamole to accompany our White People Enchiladas. Let me know if I should share the recipe, so you can try them at home!
