Hi there! I did not post anything yesterday, which is the first day in a few weeks I haven’t posted. Between a long day at work and taking home over 3 hours of work, my day wasn’t great. Zach did cook us a late night dinner, which meant a lot after the day I had. Today, I had another long day where I got home much later than usual. Zach asked me if I wanted anything specific for dinner, and I said some pasta and a veggie would be great. Zach made me some delicious Tomato Sauce Cavatappi drizzled with Homemade Pesto and sprinkled with freshly grated Parmesan. The side veggie he chose was broccoli, which he seasoned well with a mix of garlic powder, onion powder, and some Italian spices. He also made us garlic bread by smearing minced garlic, butter and Italian spices on some thick cut bread, and then baking in the oven until perfection. Not only did he document himself cooking all of this, but he even took a picture of his ‘Mid-Cooking-Dinner Snack’, which was a Red Lobster Cheddar Biscuit. The end result was a lovely dinner that I enjoyed with the love of my life. I have mentioned Zach a couple times on my blog, but I want to take a second to rave about him. I am so thankful for him everyday. He was the one to encourage me to start this blog, and I am so happy that I did. This blog has given me such an outlet to express myself and to celebrate my love for cooking. He is the kindest, sweetest and most considerate partner, and I am so blessed to have him. We have been through so much together, especially in this past year. Despite the hard times, I would not want to fight through the struggles of life with anyone else by my side. Zach, I love you with all of my heart. Thank you for the lovely dinner!
