Chicken Fajita Taco!

One of my favorite foods I love to get at a Mexican restaurant is Fajitas! Yes, they make a grand entrance as the hot plate travels to your table. Do I enjoy being a little extra sometimes? Yes, of course! I feel like everyone enjoys moments like those where the loud, delicious food leads to your table as everyone around watches in hunger. I like to enjoy nice things, which includes food and experiences, so yes, I could be considered a little extra. Do I care? Not really. I enjoy what I like and love to share those things with others. For lunch today, I took out the small chicken breast and julienned bell pepper from my freezer to make a quick, yummy lunch. I sautéed the chicken and bell pepper in olive oil, salt, pepper, chili powder, cumin and garlic powder. Once the chicken was browned beautifully on both sides, I set the chicken aside to rest as I finished sautéing the bell pepper. Once everything was ready, I assembled the taco with a toasted tortilla, chopped chicken breast, bell pepper, guacamole, cheese, hot sauce and a dollop of greek yogurt. I also love lots of citrus, so I make sure to squeeze plenty of lime juice on my tacos. I hope you have something nutritious and flavorful for lunch today!
