Flourless Fudge Cookies!

Post Housewarming Party, I had certain recipes that used Egg Yolks, which left multiple Egg Whites in a bowl in my fridge. Between the Homemade Gelato and Pasta Dough for the Fried Raviolis, I had 8 eggs worth of Egg Whites leftover. What can you make when you have lots of Egg Whites? I found this delicious recipe for Flourless Fudge Cookies, and I got two thumbs up from Zach. If a fudge brownie and a cookie had a love child, this would be it. The egg whites help create a thin crunch on the exterior of the cookie, where the inside is rich, fudgy and chocolatey. As a home cook, I am always trying to be as resourceful with food as possible, in order to eliminate more waste and to utilize as much out of each ingredient as possible. I know that other home cooks think the same way, and I’ve found a great use for all of those egg whites in your fridge. Make these Flourless Fudge Cookies and thank me later!
