I’m sure that you, the reader, have read my blog and thought to yourself, “Does this girl cook elaborate dishes every night?” And the answer to that, is nope! I enjoy making elaborate dinners when I have the energy, especially on my days off. During the week, I will either find easy recipes that I can eat as leftovers for a day or two, or I will make sure I have a variety of ingredients to make easy dinners. Tonight, I had some cut up heirloom tomato, fresh mozzarella, and basil pesto all hanging out in my fridge. I decided to pile those onto some sourdough bread and pop it in the Panini Press for a couple of minutes. I took it out when the bread was perfectly crisp and the cheese was oozing out of the panini. When I took this picture, I realized I did not take the time to get the best angle or take multiple pictures, so that I have choices when creating a post. I didn’t even clean my coffee table for this picture, so that the focus of the photo is solely on the food. This is a real, honest post from a real, honest lady who was tired from a long day. Some days may look like a five-course meal and some days may look like a simple sandwich, and that is okay! I scarfed down that delicious panini and enjoyed sipping on my lime sparkling water in a fancy glass. I feel absolutely content. I do plan on creating some elaborate meals and some desserts in the coming days, so stay tuned to see what’s next!
