To celebrate National Pumpkin Day, I baked some delicious Pumpkin Cream Cheese Muffins! The recipe I replicated can be found here. Once the Fall Season hits, I love ordering Pumpkin Cream Cheese Muffins from Starbucks. To be able to make these from home made me ecstatic and I even brought out my new Pumpkin Apron to wear. First, I placed all of the dry ingredients in a separate glass bowl. Then, I placed all of the wet ingredients in my Kitchen-aid Mixer. Once combined, I slowly added the dry to the wet mixture to form the batter. I made sure my muffin tin had liners before scooping the batter into them. Once filled, I also whipped together the cream cheese frosting and scraped into a plastic bag. After cutting the tip of the bag, I piped the top of each muffin with a generous dollop of the cream cheese mixture. After baking in the oven at 375 for about 18 minutes, what came out were these fluffy, gorgeous muffins. The fluffy cake, the perfect balance of pumpkin and the tangy bite from the cream cheese make these the perfect treat. I highly recommend making these during this lovely Fall Season!
