I just have to share with you that I have a secret love affair for something, and it is citrus! I use citrus in almost all of my cooking. It brightens up drinks, sauces, vegetables and proteins. The acidic flavor adds dimension to almost any dish. It can be the star of a dish or beverage, or it can be the supporting character for the main act. Even the science behind citrus is fascinating. An example of this is by creating ceviche, which is done by soaking raw fish, such as shrimp, in a bowl of citrus juice, which cures the protein. It can also be used to create incredible marinades for proteins. I especially love citrus in my cocktails, mocktails, pesto and on my tacos. If I can add some citrus or acidity to my meal, I will absolutely add some fresh lemon or lime juice for that bright punch that elevates any dish. Even sweet desserts can benefit from a squeeze of lemon or orange juice to balance the sweetness of the dish. One example of this is in an Apple Betty, which I made over two weeks ago, where you soak the fruit in orange juice. I would love to know some of your favorite citrus fruits and your favorite recipes that highlight citrus!
